Steamed Broccoli with Yoghurt Tahini Sauce



Steamed or boiled broccoli is cleansing, healthful, high in vitamin C, as well as protein (45% of the calories in broccoli are from protein), and fiber. It's one of my favorite veggies that I try to include in my diet as often as possible.


It's pretty easy to cook but you have to be careful not to overcook it as when that happens your beautiful vibrant green broccoli will turn olive green . . . and sometimes mushy too!


When steaming broccoli always make sure to get the water hot and really steamy before adding the broccoli to the steamer basket. The cooking time should not exceed 5 – 6 minutes and it’s always best to cool it down immediately after cooking by placing the broccoli florets with stems into a large bowl with cold water and ice cubes.


The tahini sauce can be made a few hours or even a day ahead of time. Making it ahead of time will enhance its taste. If you are using a freshly chopped herb instead of the dry oregano, it's always best to add the fresh herb, to taste, just before serving.



Ingredients


1 Fresh Broccoli head, sliced into florets with stems, boiled or steamed

170g Yoghurt 2%

15 – 20 g Sundried tomatoes, finely chopped

2 full tsps. Tahini, or to taste

½ - 1 lemon, juice and zest, to taste

A little dry oregano or freshly chopped herbs of choice, to taste

Pepper & salt, to taste

Bukovo (crushed red pepper flakes), to taste

Extra virgin olive oil, optional



Preparation Method


Make the sauce by mixing all the ingredients. I normally just place the yoghurt into a glass bowl and then add the sundried tomatoes, tahini and half the fresh lemon juice with lemon zest and mix.


The rest of the ingredients I add, to taste, and mix well. Please be careful with the crushed red pepper flakes as they are spicy! I often just sprinkle it over the yoghurt sauce on the plate.



Cover glass bowl with plastic wrap and place in fridge until ready to use. Just before serving you may want to thin it out a bit with extra fresh lemon juice or if you prefer, a little bit of extra virgin olive oil.


Steam broccoli and cool down and serve at room temperature.



Just before serving, place some sauce onto a dinner plate and top with steamed broccoli and if you like, drizzle with a wee bit of olive oil.
