My Wild Asparagus Recipe Inspired by Greek Easter Celebrations in Achladokampo

Spending Greek Easter in the mountain village of Achladokampo, Peloponnese, offers more than just beautiful scenery and warm hospitality.



It also provides a chance to connect with nature’s gifts, like wild asparagus freshly picked from the surrounding hills. After returning to Athens with a generous bunch gifted by a local who knew my fondness for asparagus, I created a simple yet flavorful dish that captures the spirit of that celebration. This recipe combines the fresh, earthy taste of wild asparagus with a touch of pesto and the richness of hard-boiled eggs, finished with a sprinkle of herbal salt. It’s a perfect way to bring a taste of Greek tradition into your kitchen.


Discovering Wild Asparagus in Achladokampo


Achladokampo is a small mountain village known for its natural beauty and traditional lifestyle. During Easter, the community gathers to celebrate with food, music, and family. One of the local treasures is wild asparagus, which grows abundantly in the nearby hills. Unlike the cultivated variety, wild asparagus has a more intense flavor and a tender yet slightly crisp texture.


Locals often forage for wild asparagus in early spring, making it a seasonal delicacy. When a local resident heard about my love for asparagus, she kindly offered me a bunch she had just picked. This gesture reflects the generosity and connection to nature that define the village’s way of life.


Preparing Wild Asparagus for a Simple Lunch


Back in Athens, I couldn't wait to cook some of the wild asparagus. My goal was to emphasize the freshness of the asparagus without overpowering its natural flavor. Here’s how I prepared it:


  • Cleaning: Rinse the asparagus gently under cold water to remove any dirt or grit.

  • Trimming: Snap off the tough ends where the stalks naturally break.

  • Steaming: Place the asparagus in a pan with a small amount of water and steam for about 3-5 minutes until tender but still crisp.


Steaming preserves the bright green color and delicate taste, making it the ideal cooking method for wild asparagus.


Mixing with Pesto for Added Flavor


To complement the asparagus, I mixed it with a small amount of homemade pesto. The pesto adds a fresh, herbal note without overwhelming the vegetable’s natural taste. You can use store-bought pesto if you prefer, but homemade versions with basil, pine nuts, garlic, olive oil, and Parmesan cheese work beautifully.





  • Toss the steamed asparagus gently with about 2 tablespoons of pesto.


  • The pesto coats the asparagus lightly, enhancing the flavor while keeping the dish light.




Topping with Hard-Boiled Eggs and Herbal Salt


For a finishing touch, I topped the asparagus and pesto mixture with one or two chopped pre-cooked hard-boiled eggs. This addition brings a creamy texture and subtle richness that balances the dish.


  • Boil eggs for about 8 - 10 minutes until fully cooked (I always do that in advance) & store them in the fridge until ready to use.

  • Peel and chop them into small pieces (or use an egg -slicer)

  • Sprinkle the eggs over the asparagus mixed with the pesto.


Finally, I added a pinch of herbal salt. Herbal salt combines sea salt with dried herbs such as oregano, thyme, or rosemary, which are common in Greek cooking. This seasoning adds a fragrant, savory note that ties all the flavors together.
