Ingredients
2 – 4 tblsp extra virgin olive oil
1/4 cup finely sliced scallions
2 tblsp finely chopped flat leaf parsley
2 tblsp finely chopped dill
1/2 cup water
1 full tsp tomato paste
200g fresh baby spinach
250g cooked Greek giant butter beans in tomato sauce*
75g – 100g Feta cheese, crumbled
Freshly ground black pepper
Preparation Method
Heat olive oil in a large skillet. Sauté sliced scallions. Add parsley, dill, water, tomato paste and mix. Add baby spinach and as soon as it wilts, add the beans with tomato sauce from tin and cook until beans are warm. Take skillet off heat, add Feta cheese and mix by shaking skillet a bit. The less you stir the better! Just before serving season with freshly ground black pepper to taste.
Serve warm or at room temperature.
Yield: 2 - 4 servings
Tip!
For this recipe you can either use home cooked Gigantes (giant baked butter beans in tomato sauce) or 280g (1 tin) of Greek gigantes in tomato sauce - I would recommend the Greek Paliria brand that are tasty & high quality.
