Nestled in the small village of Kapparia on Andros Island, Marianna's Tavern (Το στέκι της Μαριάννας) invites you to dive into the heart of authentic Greek cuisine. Throughout the year, this is where travelers and locals alike meet and savor the company of each other while enjoying tasty traditional homemade meals... made in delightful harmony with locally grown or sourced fresh ingredients.



 A Warm Welcome to Kapparia


Andros Island might not be the first destination that comes to mind for food lovers, but what it lacks in visibility, it makes up for in flavor. Marianna herself takes pride in welcoming you and showcasing the island’s rich culinary scene. Each time you enter her tavern, the inviting scents of freshly cooked local specialties wrap around you like a warm embrace and open up the perfect gateway to genuine Greek hospitality and cuisine... that I guarantee will always leave you craving more.

 

The Essence of Local Greek Flavors


At Marianna's Tavern, the menu is a true celebration of local produce and fresh ingredients. Each dish narrates a story rooted in Andros Island's culinary heritage, ensuring that every bite reflects the land.

 

Each day of the week, Marianna prepares one or two iconic Greek dishes such as rice-stuffed veggies with fresh herbs, pastitchio, or moussaka, along with various salads, dips, and mezes. If you are new to Greek food or just love sampling various flavors then consider ordering a selection of mezes. These small plates allow you to experience multiple tastes at once.



For instance, the tzatziki is a refreshing yogurt dip served with bread or pita, while the Saganaki, a delightful fried cheese that melts in your mouth, is accompanied by a Greek salad, offering a contrast of salty and fresh flavors. A noteworthy choice includes the tavern's dishes made with various pulses like the fava, seasoned with fresh lemon and herbs, highlighting a classic yet distinctive dish. To enhance this experience, pair your mezes with a glass of local wine or the tavern's ouzo, setting the stage for a perfect Greek meal.



Marianna is also really well-known for her outstanding Frutalia; the traditional potato and egg omelet, native to Andros Island, which perfectly showcases a delicious comfort food . . . and a specialty she taught me to make this past summer.

 


As I watched Marianna make the Frutalia, I instantly knew I wanted to include this specialty in the Cooking and Hiking program for a group of Icelandic friends that my friend Maria and I were planning for the first week of September 2024. I truly felt that this classic dish, with or without an added twist, connects you directly to the culinary traditions of Andros Island . . . and as I savored this dish, it felt like experiencing a slice of the local culture and identity.

 

 Ingredients That Matter


Frutalia might seem like a standard potato and egg omelet, but it features distinct ingredients that elevate it. Its core ingredients are as follows:

 


  • Potatoes: Savory & robust potatoes are the star of this dish! They are thinly sliced and then deep fried or sautéed to a golden brown.

  • Eggs: Fresh, free-range eggs provide a rich taste and creamy texture. Mariana, like many families on Andros Island have their own hens, ensuring the utmost freshness.

  • Onions (optional): A touch of sweetness, onions are sautéed until translucent, enhancing the overall flavor.

  • Sausages:  Thinly sliced hearty or spicy village sausages make this omelet even tastier (optional).

  • Cheese: Crumbled Feta or other local cheeses offer a creamy, tangy addition that complements the dish perfectly.

  • Herbs: Fresh herbs oregano, parsley and dill add flavor and a pop of color. Depending on the season, mint can also provide a refreshing twist.

 

Other Optional Additions:


While many enjoy the classic Frutalia, locals often enhance it with their favorite ingredients from their veggie gardens, such as: 

  • Bell Peppers: For added color and crunch, many people include diced bell peppers.

  • Tomatoes: Fresh tomatoes mix well with the eggs, contributing a juicy flavor.

  • Zucchini: This addition brings moisture and subtle sweetness to the dish.

  • Lemon: Grated lemon zest



The Art of Making Frutalia


Crafting the perfect Frutalia combines skill with simple steps and practice. At this point I’m not giving you a recipe as such, but I thought I’d share an easy guide with you that will enable you to create this dish at home:

 


1.     Preparation: Start by washing and peeling the potatoes, then slice them thinly. If using dice the onions and prepare any optional ingredients you might want to use to make your own twist.

 

2.     Cooking the Potatoes: In a large skillet, heat olive oil and add the potatoes and onions. Fry until golden brown and tender but not mushy, which usually takes about 5 - 10 minutes.


 

3.     Egg Mixture: While the potatoes cook, whisk eggs in a bowl with salt, pepper and any fresh herbs you prefer.


4.     Combining: Once the potatoes are ready, lower the heat and pour the egg mixture evenly over them in a circular motion. Sprinkle top with cheese and cook gently for about 5-7 minutes.



5.     Flipping: This is the only tricky part! Place a plate on top of the omelet and hold it down with one hand and then carefully flip the omelet over onto the plate. Then place it back in skillet and finish cooking it covered until it sets and appears golden brown.


6.     Serving: Enjoy your Frutalia warm or at room temperature with an optional sprinkle of fresh herbs or cheese on top.




A Sweet Ending to Your Meal

No Greek meal is complete without dessert. Marianna’s Tavern offers a tempting small plate with some type of homemade seasonal spoon sweet . . . .. that are a must-try for anyone craving something sweet! Of course, if you are really up for something more . . . then I suggest you enjoy the spoon sweet with a spoonful of strained local yoghurt!



Another favorite, when available, is the Loukoumi, a soft, sugar-dusted treat that melts in your mouth, creating a light and delightful finish to your meal. Pair it with a cup of rich Greek coffee, and it encapsulates the ideal way to conclude your culinary journey at the tavern.
