Irresistible Vanilla Custard with Berries!

I love easy to make desserts like this creamy and rich vanilla custard that is pretty much the same as my easy to make creme caramel recipe without the caramel! For the creme caramel recipe see: Easy2Make Crème Caramel (cook-eat-go.com)

Vanilla Custard with Berries

Ingredients

1 x can sweet-condensed milk (400g can)

1 ½ can milk (use condensed milk can as measure)

3 large eggs

1 tsp vanilla essence or to taste

Garnish

Berries: Raspberries and Blueberries

Small fresh basil leaves

Preparation Method

Place sweet-condensed milk, milk, eggs and vanilla essence in a bowl and mix carefully, either in mixer or with a whisk. Pour the custard (best done through a small sieve) into small custard molds or coffee mugs/cups that have been very lightly brushed with corn oil and cover tops with aluminum foil.

Place molds in a bain-marie (water bath) and cook in preheated oven (180̊ - 200̊ C) for about 30 - 40 minutes or until your custard is set.

Remove mold with your custard from bain-marie in oven, remove foil, and leave to cool at room temperature. Once cooled, turn the custard onto small serving plates and decorate with berries and small fresh basil leaves.

Tips!

The custard can be made ahead of time but make sure to store custard in refrigerator, best in molds or mugs/coffee cups covered with plastic wrap.

Sometimes the custard might not slip down onto plates. If this happens, just use a small very sharp knife to loosen the edges or place the molds in a bit of hot water for a minute or two . . . and then turn custard onto serving plates!

Enjoy!
