The Basics of Hummus

At its essence, hummus consists of a handful of ingredients: chickpeas, tahini, olive oil, lemon juice, and garlic (plus seasonings of choice). This simple blend results in a smooth, savory dip that pairs well with pita bread, crackers, fresh veggies, or even as a sandwich spread. The true charm of hummus is its versatility. You can modify it easily to create unique flavors that suit your taste.

Classic Hummus Recipe

Ingredients

  • 400g boiled fresh chickpeas or 1 can (425g /15 oz) chickpeas, drained and rinsed

  • 1/4 cup tahini, or a bit more to taste

  • 2 tablespoons extra virgin olive oil

  • 60ml or 4 tablespoons fresh lemon juice

  • 1 - 2 garlic cloves, minced

  • 1/2 tsp cumin powder, or to taste

  • Salt to taste

  • Cold water as needed

Preparation Method

  1. In a food processor, combine the chickpeas, tahini, olive oil, lemon juice and garlic.

  2. Blend until smooth, adding cold water a tablespoon at a time until the desired consistency is achieved. Add the cumin and salt, to taste.

  3. Serve with a drizzle of olive oil and a sprinkle of paprika or chili pepper flakes for garnish.

This classic recipe serves approximately four to six people and offers a creamy texture that works well for dipping or spreading.

For a delightful take on traditional hummus, try adding roasted red peppers. This twist introduces a sweet and smoky flavor profile that enhances the classic dip.

Ingredients

  • 1 can (425g/15 oz) chickpeas, drained and rinsed

  • 2 tablespoons olive oil

  • 2 - 4 tablespoons fresh lemon juice

  • 1-2 garlic cloves, minced

  • 1/2 cup roasted red peppers (jarred or homemade)

  • 1/2 tsp cumin or to taste (optional)

  • Salt to taste

  • Cold water as needed

Preparation Method

  1. In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, roasted red peppers, and salt.

  2. Blend until the mixture is smooth, adding water to reach your preferred consistency.

  3. Serve with a drizzle of olive oil and slices of roasted red pepper on top.

This vibrant hummus is ideal for parties or as a colorful addition to a lunch, increasing your veggie intake by nearly 15% if paired with fresh vegetables for dipping.

Spicy Hummus

If you're a fan of heat, a spicy hummus is perfect for you. Instead of adding red peppers as per the above recipe, add 1 - 2 jalapeños, seeded and chopped.

Adding red pepper flakes to the Basic Hummus recipe will also give your dip an exciting kick.

Herb-Infused Hummus

For a refreshing twist, consider adding a half a cup of fresh mix of herbs such as parsley, cilantro, or basil to the Basic Hummus recipe above (with or without the cumin).

This herb-infused hummus not only delights the palette but also offers an appealing pop of color to any spread. Adding fresh herbs can increase the nutrient content, lending additional vitamins A and K.

Other Options: Sweet Potato, Butternut Pumpkin or Red Beet Hummus

For something truly unique, try sweet potato hummus, butternut pumpkin hummus or a colorful red beet hummus. The natural sweetness of these veggies beautifully contrasts with the savory elements of traditional hummus.

Essentially, all you need to do is incorporate about 1/2 to 1 cup of your chosen mashed vegetables into the basic hummus recipe and mix thoroughly. Adjust the seasoning and amount to suit your taste!
