Chocolaty Chocolate Mousse

Indulge your Valentine's sweet tooth with this truly rich, chocolaty chocolate mousse! I make this recipe for my chocoholic hubby who likes it without any garnish . . . any time of the year!


Ingredients

100 g dark chocolate (70% cocoa), broken into small pieces

200 g semi-sweet chocolate (30 – 50% cocoa), broken into small pieces

5 tblsp strong black coffee

25 g unsalted butter

4 large eggs or 5 regular sized eggs, separated

Garnish

Grated chocolate, chocolate swirls or berries

A dollop of whipped cream is also nice


Preparation Method

Place the chocolate in a heatproof bowl over a pan of gently simmering water

(don't let the bowl touch the water). Stir until melted. Remove bowl from heat

and set aside to cool slightly.

Stir in butter, a little at a time. Add egg yolks, one at a time and mix well.

Remove from heat and leave mixture to cool slightly.

Whip the egg whites stiff and fold into cooled chocolate mixture.


Spoon into serving glasses or bowls and chill in fridge for at least 2 hours.

Garnish with whipped cream, berries, chocolate swirls or other garnish of choice, cover with plastic wrap and leave in fridge until ready to serve.


Tips!

If you prefer, you can melt the chocolate in a microwave. Just put chopped chocolate into a glass bowl. Cover bowl with plastic wrap and place in microwave on high for a minute or so. Take out and using a whisk or wooden spoon give the mixture a good sir.


If you like, add 1 – 1½ tblsp of brandy or flavored liquor to the recipe (coffee, almond or orange). The brandy or liquor should be added to the melted chocolate before folding in the beaten egg whites.

Yield: 6 - 8 servings
