Indulge your Sweet Tooth with Dessert!

Summer is here and it’s time to keep things as cool as possible in the kitchen. I always try to avoid turning on the oven as much as possible and I make the freezer my best friend in as many ways as possible!



Try to plan your meals and when you cook or bake something you really like in the oven, make sure to double the recipe and freeze individual portions for later use. To make easy frosty desserts, smoothies and sweet sauces I like to keep cookies and small meringues as well as a stash of fruit at hand in my freezer. Buy bags of frozen mixed berries, or mix your own when in season, together with slices of bananas, peaches and apricots and get ready to indulge on a delicious, impressive and easy2make dessert like today’s recipe . . . whenever you get the urge!

Easy2Make Berries & Cream Dessert!



Ingredients


200 ml heavy whipping cream

150 g frozen berries of choice

8 small meringues, or to taste

Cocoa powder and 2 bowls or glasses for serving


Yield: 2 servings


Preparation Method


Whip cream in cold bowl of an electric mixer until stiff peaks form. Fold in the berries and mix very lightly!


Place whole or crumbled meringues at bottom of glass and top with cream-berry mixture. Repeat with second layer and top with meringue.


Dust top with cocoa (use a small sieve) and serve immediately!


Tips!


To ensure the perfect results when whipping cream, make sure it's very cold and if it's a hot summer day, you might want to place the bowl you are going to use in the freezer for about 10 minutes before using.


If you like, you can add a bit of vanilla sugar or bit of confectionery (powdered) sugar to cream while beating but personally I don’t think it’s necessary as the sweet meringues will do the job!


Normally, I buy bags of frozen berry mixtures and keep at all times in the freezer. If you are in a hurry to make a dessert in less than 5 minutes, then just place the berries in a colander and sprinkle with cold water to defrost slightly. Make sure to drain well before adding to cream!


If you happen to have some vanilla ice-cream in your freezer, you can always add a scoop or two to this dessert for an extra rich treat! Just place the ice-cream at the bottom of a glass or bowl and then top with cream and crumbled meringues, to taste.
