Scrumptious Bread Rolls!


Bread Rolls for Xmas

To make my holiday meals extra special I love to make these scrumptious tasting bread rolls. They are ideal for brunch and a lovely complement to any festive/holiday lunch or dinner!

Normally I make them without any topping but for a sweeter version you can sprinkle them with pearl sugar or cinnamon sugar and for a savory version with sesame seeds or finely chopped fresh herbs, coarse salt, cracked pepper. . . . or anything you like!

These bread rolls freeze very well and thus they are perfect to make ahead of time. When ready to use, remove from freezer, place on baking sheet and defrost/warm up in hot oven.

Scrumptious Bread Roll Recipe

50 g fresh yeast or 2 tblsp yeast granules

¼ cup water

¼ - ½ cup sugar

100 g butter (unsalted)

1 cup milk

3 large eggs

5 ½ - 6 cups of all-purpose flour

1 tblsp salt

Egg-wash: 1 whole large egg

Preparation Method

This bread dough can be made by hand but I like to use my electric mixer with a pastry hook . . . which is a really quick and less messy too! Whatever method works for you is fine!

In large bowl (or bowl from mixer) mix yeast with water. Add sugar and mix.

Melt butter and mix with milk. Add whisked eggs and then add to yeast mixture and mix.

Add 4 ½ - 5 cups of flour and blend carefully. Add salt and then, slowly add more flour as needed. Mix well until you have a soft, pliable dough. If doing by hand, knead for a good 5 - 10 minutes.

Place kneaded dough into a slightly oiled bowl and cover with plastic wrap. Set aside and allow dough to rise.

Once dough has doubled, remove plastic wrap and punch down. Knead a bit and then shape dough into desired roll forms (round, braids, twists or other) and place onto a baking sheet that has been covered with parchment (baking) paper.

Place egg in small bowl and whisk with fork. Then, brush rolls with egg-wash and sprinkle with topping (optional).

Bake in pre-heated oven 180 ̊ – 200 ̊C (375 ̊ – 425 ̊F) for about 15 – 20 minutes.

Once baked, remove from oven and place on baking racks to cool.

Serve at room temperature or slightly warm.

Yield: 24 – 40 rolls depending on size
